The Portion Control Supervisor will be the senior leader in the portioning operation, overseeing both the quality and craftsmanship of the portion control orders. This individual will have extensive knowledge of the NAMP Meat Buyer’s Guide for product specifications in addition to knowing quality standards for Beef, Pork, Lamb, and Poultry to ensure the products meet the customers expectation for grade and quality. Butcher Shop and Supervisory experience preferred, this person will train portion control team members on the quality and craftmanship that our customers expect.


Reports to: Director of Production

Internal Contacts: Houston Meat and Poultry Plant Management team, Inventory Control Supervisor, production employees, QA personnel, Warehouse team, Night Warehouse team, Maintenance team


Primary Job Duties 

  • Direct Responsibility for the Meat and Poultry Portion Control Department including the portion packaging team. 

  • Develop a coordinated portion control team that manages the daily activities and adheres to the company values. 

  • Ensure portion teams are adhering to the item/customer specifications, yield expectations, and quality standards. 

  • Manage production yield cutting tests. Observe the work of employees to insure proper specifications and proper yields are maintained after test percentages are confirmed. 

  • Meet weekly with department leads and equipment operators to cover performance and expectations. 

  • Conduct daily Safety and Food Safety awareness toolbox meetings with the entire department. 

  • Daily Review of the Product Short Report and Process Requirements Report to ensure all items are covered for next day delivery.

  • Understand and teach quality standards for Beef, Pork, Lamb, and Poultry including USDA Grading, quality defects, and marbling standards.

  • To initiate and complete raw material claims when product does not meet specifications

  • Hold team members accountable to all company policies and procedures. 

  • Other duties as assigned.


Working Conditions

Monday through Friday 11:00 A.M. until finished and Saturday on an emergency basis only. Temperatures in the mid 30-degree F. to mid 40-degree F. range. Damp wet floors and air flow from refrigeration units.




Position Pre-Requisites

A minimum of five year’s experience as a manager or supervisor in a meat production facility is a requirement. Working knowledge of Word and Excel is required. Bilingual in speech and reading is a plus. Arithmetic skills must include addition, subtraction, multiplication, division, and an understanding of percentages. The assistant manager must know every primal and sub primal and be able to suggest the correct cut for all finished products. HACCP certified and comfortable with QA records and programs


Skill Requirements

Must be a leader. Must have been in some phase of meat production that included portion control. Must have working knowledge of all production room equipment and utensils.


Physical Requirements

This job requires a great deal of lifting and the weights will exceed 75lbs., the ability to lift correctly is essential. Ability to stay alert for long hours.
