To peel and denude various types of meats for cubed steaks or cutlets. To process cleaned
meats into portioned, tenderized steaks. To prepare each order for packaging. To
recognize unusable cuts of raw and finished product and to report this to the Meat
Production Foreman.


Primary Job Duties
1. Removal of fat and skin from raw products
2. Portion control cutting of boneless meats
3. Operation of a cutlet tenderizer
4. Help and learn other positions


Position Pre-Requisites

1. Must know how to efficiently remove fat and skin from raw products
2. Must know how to portion
3. Must be able to read order labels
4. Must be able to follow directions
5. Must have working knowledge of the Meat Department Trimmer job



Walk-In’s Welcome

Monday – Friday

9am – 4pm


Must wear a mask on our premises.


Skill Requirements

Must be able to read and write numbers. Must be able to read English on meat order labels and written instructions.

Physical Requirements
Must be able to lift at least 75 lbs. Must be able to stand for long periods of time and to
use hands and arms constantly.


Working Conditions

Monday through Friday 11:00 A.M. until finished and Saturday on an emergency basis
only. Temperatures in the mid 30-degree F. to mid 40 -degree F. range. Damp wet floors
and air flow from refrigeration units.
